Executive Chef For Alsace native David Werly, an interest in the culinary arts began while he was a young boy who anxiously awaited his father’s weekend ritual of making apple tarts. This simple family tradition ignited a spark, encouraging Werly to pursue a culinary career that has ultimately landed him in some of the World’s most prominent kitchens.
Chef Werly brings 17 years of culinary excellence to The Setai, South Beach including stints at multiple Michelin star rated restaurants in Paris, the Hotel Ritz and Le Précatelan Lenotre. It was at the Private Club “Montes” in London where he trained under prestigious Chef Alain Ducasse as a Master Cook.
He then arrived to the United States to join the prestigious Le Cirque family at The Palace Hotel in New York, moving on to open the Le Cirque in Mexico City and the reopening of the most recent Le Cirque in the iconic Bloomberg building in New York. Chef Werly went on to earn his esteemed one Michelin Star and Five Diamond Award AAA at the Le Cirque in Las Vegas, located in the acclaimed Bellagio Hotel.
Today, as Executive Chef at The Setai, Chef Werly oversees all of the culinary aspects of the property including The Restaurant, The Grill, The Pool & Beach Bar, The Bar & Courtyard, and In-Room dining. Keeping with The Setai’s philosophy of providing guests with authentic Asian and Western cuisine, Chef Werly will continue to offer classic dishes with a modern interpretation all while using the finest seasonal ingredients available. |
