Set the Mood this Valentine’s Day
 
Known for artfully blending Western and Eastern cuisines, Michelin-star awarded Executive Chef David Werly has conceived a menu that is a sensual mingling of French and Asian ingredients and techniques. In the dining room, romantic touches such as twinkling votive candles and rose petals adorn each table helping to further set the mood. And once the final bites have been devoured, couples receive a box of Teuscher chocolates of Switzerland to share and each lady a single rose to mark the occasion.
 
Begin with a savory “Pomme D’Amour”, a Duck Foie Gras Popsicle with Granny Smith Apple and Angel Hair, followed by Chef Werly’s signature Hamachi dish featuring Yuzu Marinated Yellowtail, Mirin and Sake Hearts of Palm, Hijiki, Avocado and Mango. Next a Morel “Pot Pie” of Morels, Cream, Foie Gras & Ruby Port will be served, along with New York Strip Loin with Pata Negra, Green Asparagus, Potato Soufflé and Royal Trumpet Mushroom. Bring the delectable meal to a palate-pleasing close with a “Valrhona” Chocolate Bar with a Gelee of Red Fruits, Fresh Raspberry and Raspberry Sorbet.
 
The Valentine’s Day degustation menu is priced at $145.00 per person and includes one glass of Taittinger Brut Prestige Cuvee Champagne upon arrival. Wine pairings can be added to the experience for an additional $65.00 per person. Prices are exclusive of tax and gratuity.

Profile: New Pastry Chef Sylvain Marrari
 
The Setai is pleased to welcome Sylvain Marrari, our new classically trained Pastry Chef with over ten years experience.
 
Growing up in Southern France, Sylvain started his career as a Commis in Pastry and moved on to work in an array of one to three Michelin Star rated hotel restaurants throughout France. In 2005, Sylvain ventured away from the Southwest of France, gaining valuable knowledge practices at two Alain Ducasse restaurants in Gstaad and Monaco.
After this exceptional experience, Sylvain accepted a position as a Chef de Partie in Pastry at the 3 star Michelin rated Restaurant Pic in Valence. It was here where he had the pleasure of working with Pastry Chef Philippe Rigollot (awarded World Champion 2005 and "Un des Meilleurs Ouvriers de France” 2007), where he discovered a newfound sense of precision and overall passion for creating truly exquisite pastry delicacies.
Joining The Setai marks Sylvain’s first time to the US where he has taken a big leap to work alongside French natives Chef de Cuisine Mathias Gervais and Michelin Star awarded Executive Chef David Werly. Sylvain is very proud to be part of The Setai’s exceptional culinary team and looks forward to further contributing to its distinctiveness, as well as Miami’s sun, weather and beaches.
